Super Simple Gluten & Nut Free Bliss Balls

I have a bit of a sweet tooth, I’m also obsessed with adding vegetables to all.the.dishes. Here is the ‘recipe*’ for Super Simple Gluten & Nut Free Bliss Balls. *I say recipe but I basically just throw random amounts in and see how they turn out every time. So… good luck, I hope it works out for you too.

What you’ll need:

Quinoa Flakes (approx. 2 tablespoons) Cacao (1 – 2 tablespoons) 15 x Medjool Dates Baby Spinach (about 1 cup) Frozen Blueberries (about 1/2 cup) Shredded Coconut (to roll the balls in) Method: Throw (or gently place) all ingredients except for Coconut in a food processor until it’s all mixed and really sticking together. Roll the mixture into about 12 balls. Place them in a bowl with coconut and roll them around until they’re coated. Put them in the fridge. Enjoy! (P.s I take no responsibility for how these turn out or if you actually like them 🙂 But I do love them and so does the family. Also, because they don’t have nuts, they are fine for daycare too.)
